Spanish gazpacho, a simple and refreshing summer soup. An explosion of vitamins, only made with raw vegetables.
- 4 very ripe peeled tomatoes
- 2 peeled cucumbers
- 1 peeled red pepper
- 1 small onion
- 1 clove of garlic (without the center stem)
- 2 slices of two days old bread
- 1 spoon of vinegar
- 4 spoon of Spanish extra virgin olive oil
- 1 tea spoon of sea salt
- 100 ml water
Blend everything together until very fine, and you will have a splendid cold soup.
You can keep it in the fridge and take one cup every day.
